The Barber family have been making cheddar cheese for longer than anyone else worldwide. Barber is now the oldest surviving cheddar-makers in the world.
To make the best cheese, we need the best West Country milk. Their dairy cows graze the lush pastures of Somerset and Dorset to produce rich, creamy milk. They also work with many of our neighbouring farmers who supply us with additional milk and we’re proud to support our local farming community in this way.
Being the sole guardians of the country’s last remaining traditional cheese starter cultures — the ‘friendly’ bacteria that start the cheese making process and contribute to the final texture, aroma and taste. Only by using these cultures can we be sure that we’re making true West Country cheddar.

Worleys Cider have been making a range of high-quality craft ciders at their base in Dean, near Shepton Mallet for over a decade. In that time they have built an excellent reputation for producing premium award-winning ciders with modern, colourful branding. Worleys is made in the traditional way using apples pressed during the Autumn months. The juice is then left to ferment through Winter under the influence of wild yeasts, then it is blended, matured and packaged to create their different product lines, including Red Hen and Mendip Hills. Worley's use a variety of sales channels, selling locally and nationally to pubs, restaurants, shops and delis, and exporting to territories as widespread as Netherlands, US, Hong Kong and New Zealand. They can also often be found running their popular mobile cider bar at local events and festivals during the summer months.
The Wild Beer Co was founded in 2012 by Andrew Cooper and Brett Ellis in the heart of Somerset on Westcombe Dairy Farm. Very much rooted in the rural countryside, we embrace a sense of terroir by using foraged local ingredients and naturally occurring wild yeasts – taking beer back to it’s farmhouse roots. Specializing in wild, spontaneous and sour fermentations we have a barrel library 400 strong. Barrel-ageing and blending are at the heart of the Wild Beer co. Inspired by practices from cider, wine and whisky production we will often blend several batches and vintages to create one beer.
